Ingredients

• 4 ea beets
• salt
• olive oil
• citrus zest (optional)
• thyme (optional)

Instructions

1. Peel and halve the beets, then vacuum pack with the remaining ingredients.
2. Sous-vide the package at 185 degrees for 3 hours.
3. Plate and serve.
